is egg fu young cooked differently in other areas?
I've eaten this all over Kalamazoo, Battle Creek, most of Lansing and as far north as Cadillac in Michigan, and it's always quite similar, and NEVER has beans sprouts in it. I'm looking for a recipe that is very basic, just shrimp, onion, maybe some cabbage
It depends on the Chef. I've usually had it with bean sprouts. You can add leftovers like ham, pork, chicken, shrimp, crab etc. Other add-ins can be mushrooms, scallions, etc. You may not taste much egg, because of the other added ingredients.
